In a large lidded container combine:

3/4 cup sugar

1/4 cup brown sugar

1 teaspoon salt

1 1/2 teaspoons cinnamon

freshly ground nutmeg (optional)

Cover the container and shake until well mixed.

In a large bowl beat one egg white and a teaspoon of vanilla until frothy.

Pour in a pound of halved pecans and stir with a large spoon until all the liquid is coating the pecans.

Pour the pecans into the bowl with the sugar mixture, cover the container and shake until the pecans have been coated by all of the sugar mixture.

Spread the pecans in a single layer on a large rimmed cookie sheet covered with parchment.

Bake for one hour in a 250 degree oven, stirring the pecans every 15 minutes.

Cool.

  1. This is ONLY my FAVORITE thing ever! Have you had them in a salad with goat cheese and a balsamic vinegarette???? Of course you have because you rule that hard.

    These candied pecans are currently not allowed in the house as I am on my lady time and I will stick my whole face in the bowl.

  3. My MIL makes something like these. They are okish at normal temps but HEAVEN when frozen. She keeps them in the freezer since they live in Houston and its so hot. Mercy they are way good frozen.

  5. I make 10 pounds of these every Christmas for friends…Mmmmm!! Always a huge hit and people actually have grown to expect them. Don’t like the nutmeg, tho…I use just white sugar and no nutmeg.

  7. Oh wow, candied pecans are one of my favorite indulgences. So much that I haven’t made them in years, because I eat so much of them at once that I get sick. That practicing restraint part? Yeah, not so good at it. I guess the ticket is finding someone to share them with so I can’t have the opportunity to eat them all myself…
